Bonda




Ingredients:

Potatoes - 3 nos
Onions - 1 big 
Green chillies - 3 nos
Ginger - 1/2 inch piece.
Curry leaves - few (if too big, just cut them smaller)
Mustard Seeds - 1 tsp
Maida / All purpose flour - 2 cups
Turmeric powder -  A Pinch 
Coconut oil / Refined oil -  for frying
Salt - to taste

Method:
Pressure cook the potatoes till soft around 4 whistles on medium flame.
Peel and mash the potatoes.
In a hot pan add oil and splutter mustard seeds. Add onions to this, when the onions are soft, add green chillies, ginger, little turmeric  and curry leaves.
Cook till the raw ginger smell leaves. When done remove from flame and add to mashed potatoes.Knead them well with salt and coriander leaves.
 From this mixture take a  scoop of the mixture and roll into big lemon sized ball.Make balls from the whole mixture and keep separately
In a deep bowl mix maida, turmeric and salt. Knead well the dry ingredients and add water little by little to form a batter of semi thick consistency.
Dip the potato balls in to the batter and allow to coat well. Heat the oil in a pan till smoking hot and reduce the flame to medium and deep fry  bonda's till golden brown. Remove from oil and transfer to an absorbent paper.
 Add there.......... yummy bondass are ready to be enjoyed with hotttt tea...........:)
